Lemon Chicken Recipe
WHAT YOU NEED :
1/3 cup all-purpose flour
4 tablespoons butter, divided
1/4 cup chopped fresh flat-leaf parsley
How to DO It:
Cut every chicken breast in 1/2 lengthwise. Place chicken between a pair of sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, employing a rolling pin or flat facet of a meat mallet. Sprinkle chicken with salt and pepper. gently dredge chicken in flour, shaking off excess.
Melt one Tbsp. butter with one Tbsp. olive oil in a giant slippy pan over medium-high heat. Cook 1/2 chicken in pan two to three minutes on all sides or till golden brown and done. Transfer chicken to a serving platter, and keep heat. Repeat procedure with one Tbsp. butter and remaining olive oil and chicken.
Add broth and lemon juice to pan, and cook one to a pair of minutes or till sauce is slightly thickened, stirring to loosen particles from bottom of pan. Add eight lemon slices.
Remove pan from heat; add parsley and remaining two Tbsp. butter, and stir till butter melts. Pour sauce over chicken. Serve directly. Garnish, if desired.
